It’s exactly the same here. Difference is, they fight back and will buy from the Catalan green grocer’s and not the immigrant owned one next door. It’s weird here actually. In Cataluña, the Pakistanis will own shops, butchers, barbers, veg shops etc and the Chinese have the bars. In Madrid it’s the complete reverse.

I cut the skin back, cover the whole thing (not the skin) in honey etc and put the skin back and secure with cocktail sticks… best of both worlds It just someone was telling me to salt the skin 24hours before cooking to draw out the moisture and get really crispy crackling.
