Don't know much about deer dogs but experienced pig dogs always pick out the biggest boar of the mob without training. I used to use my little 20kg pit bitch to catch feral goats for dog food a couple of times a week. I'd be by myself and she'd always run past decent size nannies and catch huge billies in awkward spots so I'd have to cut the goats in half to carry them out, lol.
