To carry on. The batch I've just put in the oven 48, i've used venison cuts from the thing that was left in my porch LOL. My butcher thinks I'm mad, as do lots of folks, but the end result is what counts. Traditional faggots are great but with a twist they are even better. Also, unlike the butcher, I can play around with herbs etc to make something totally different.
