I just think that we have a generation of people that have been taught to turn their nose up at food that isn't sanitised and packaged. ........ you should see some of the reactions from people at work when I talk about things like liver, bacon and onions or, when you tell them haggis has lung in it. Yet they've all liked crackling, rabbit pasties and squirrel pie when I've taken some in. ......... Small wins I suppose
  3. I was going to offer to give you a shout next time I've been to the butchers. This is crackling done with salt and maple syrup - I like to leave a bit of fat on it. It is crunchy but, not a teeth breaker

  5. You know what, I'm going to sound like a right old git but, folk nowadays haven't got a clue - I reckon so much is being lost. My local butcher does sell beef dripping but he has to filter out the brown bits before it goes in the tubs, otherwise people won't buy it. He also has to trim the skin off pork - I get a bit for free whenever I shop in there. He bins loads of it because his customers have either never heard of or never tried crackling
  6. I remember that - beef dripping on bread with a little salt in the 80s round nans on a Monday ....... We used to dig out the brown bits but, we had to make sure that Grandad had enough left for his work sarnie.

  11. Try one in your regular pan - it might not stick. ......... if it does, you've only ruined 1. How do the street vendors in India do theirs? - they're not all out there with posh teflon pans.
  12. Time for my guilty pleasure tonight - I don't get this too often. Fried slice with overdone beans and a couple of eggs and, pork steaks with salt and pepper rubbed into the fat before cooking.

Stick to the old rule mate - buy cheap, buy twice You don't need pricey industrial quality but, good will do or, just freeze it into blocks in tubs, label it and, bung it in the freezer. better still, make an event of it - get some sort round, crack open a fe
  14. We use the plastic takeaway type boxes - you can get them in different sizes, usually pretty cheap. If I make a pie, I just wrap it in the ceramic dish and put that in the freezer.

  16. Same here - I'd like to bow hunt the wild pigs that we have in some of the forests down this way. Then finish the day off with a hog roast and a few beers. But, it's never going to happen in this country

  18. Beef and stilton pasty tonight. .......... Nice and simple - beef mince, onion, peas and stilton with a buttery mash.
  19. I do a really simple egg fried rice - cook the rice first, oil in a pan, get it hot, put the rice in and move it around for a minute. Then crack a couple of eggs in there and keep it moving until the egg is cooked.
