  1. Are the quinces ripe or not? i can help you
  2. Agree with above. Gosses are a feckin nightmare mate if you dont know what your doing. Avoid like the plague.
  3. You warm the jars for two reasons i know. First when putting things like jams etc into jars they are at very high temperatures which could crack a cold jar, second, when you put the hot produce into a warm jar and put the lid on it will create a vacuum and the lid will tighten down just as if you bought it. As for the pans, I did it this time by simmering the big pan and holding the little pan in it but you can do it both. Its emphasis on keeping that temp down enough to cook but not letting the eggs cook if you know what i mean. its getting to sound complicated but its not honest!
  4. Its a great easy recipe joe. Emphasis needs to be on keeping the heat low enough for the eggs not to cook at the end other than that its a winner and tastes 100 times better than supermarket shite.
  5. Yes mate, nice and simple- just how i like it! Get 2 lemons and finely grate the skin (zest) -only the yellow , not the white underneath. Put in a small pan. Now squeeze lemons to get 5 tablespoons of juice (more or less to taste) and put in same pan. Add 4oz of butter and 8oz sugar and put in same pan. This is the only awkward bit, hold that small pan in a larger pan of hot water-(not boiling just hot) until its all melted and dissolved. Then beat 2 eggs and add them to the pan, then simmer on a low heat. You cant let it get too hot or the eggs will start to scramble!!! so nice and lo
  6. im having trouble getting photos up again, dont know why but my lemon curd looks lovely. Ive made one and a half jars. The proof will be when i try it properly when cool, but if it tastes as good as it look im on a winner! I will persevere with the photo Photo added! not the best photo but needed to lower the pixels to alllow it on
  7. It makes my piss boil does this. You buy decent traps and they get pinched so you buy cheap traps and they are shite, its a vicious circle. I look at the area and work out what the chances are they will get pinched. Sports pitches and fields near roads are bad for pinching. Its awful when you get stung for a load, they cost that much. Try- Moving your markers say 6ft in one direction so the markers are away from the traps but you know the distance. - Not putting markers in at all! i do some school fields which get hammered so on a weekend i put 5 duffus traps in, not mark them but remem
  8. As above. I got 3 light sussex and 3 marans a few months back. Since then ive had 2 of the light sussex turn broody on me and none of the marans have. Is this a common trait or am i just unlucky (or doing something wrong). At the moment my previously best girl is just sat there in a nest doing bugger all, i try to move her on but she just comes straight back.
  9. I made bramble gin and whisky last year and it was spot on. My question for the experts is can i, for quickness get a bottle of gin, pour some out , drop some sugar and sloes in and put the lid back on without sterilising the bottle etc? surely the bottle will be sterile when i open it?
  10. Now joe, the recipe for bramble and apple jelly is get 1lb of cooking apples (thats 1lb after youve peeled and cored), wash, chop into pieces and put in pan with a couple of tablespoons of water and simmer it for 10 mins. Then add 1lb of brambles and continue cooking them until all soft and like puree. Add 2lb of sugar and simmer until sugar has dissolved. Then turn heat up and boil hard for around 15 mins. When finished spoon into sterilised warm jars, thats it and its real good!
  11. Well ive spent 10 mins now and cant see a thing!

  17. Crete! Met her on holiday!
  18. nice pics mate. I would have a look at that perch though. If the mews jessies where to go either side of the perch and she baited she could easily end up dangling upside down. Good luck with your bird anyway mate, happy hunting!
  19. How old was the hawk when it left its parents?
  20. i didnt mate, it set itself! I got this recipe from my mam and its lovely!! 6lbs brambles and 1 pint of water, simmer for 20 mins Strain overnight in a jelly bag, dont squeeze bag or let it touch the juice thats dripped or it goes cloudy Next morning add 1 lb sugar to every pint of liquid Boil rapidly for around 20 mins Thats it and its lovely! no fannying on with pectin or owt, just that and its great! ive just made 3 jars of bramble and apple jam, will test it later!
