Well today’s cooking adventure will be made out of some left over pork belly I did a couple of days ago and the remains of the chicken from yesterday,   and today I will mostly be making chimichangas,  it’s a flatbread wrap of pulled meat and cheese deep fried, seems a thing in the states but I’ve never seen them done over here so watch this space photos to follow ?‍?

Good question mate, this might not work....... I’ve just used some granite stones I had. I got a good fire going on them with plenty of wood at 7 this morning & pulled them out a few hours later. Hopefully they hold enough heat for what I need. I’ll dig it up tonight.

Ok chimichanga prepped, pulled pork, pulled chicken with grated cheddar and motsarella cheese with a block of cheddar cheese on top ( use whatever cheeses you like ) it’s important to fold them without leaving gaps because during the frying process you want to heat and melt the cheese and crisp the outside up without to much fat getting inside, part three to follow unless they are so nice I get carried away and eat them before I get a picture ✌️

Well chimichanga complete nice enough but found it a bit greasy due to the deep frying and the cheese juice from within, won’t right it off but would do it next time under the grill or a flat iron as your only really cooking it to melt the cheese inside ✌️

The day started off good with a breakfast of champions avocado on a bed of aromatic salad with a nice poached egg.

Top drawer that,is that a barbie/smoker combined?can I come for tea?!!?

It’s a Great bit of kit Odin you can use it as a BBQ you can hang meat in and you can do two cooks at the same time as it has two grills and there’s a water pan as big as a washing up bowl that permeates moisture into the meat,  half way through the cook I will put Whisky chips in there and that gives good flavour and a nice smoke Halo on the meat here’s a couple of pics of last year some Beef Ribs see the halo lol I love it.

I’d invite you all for tea but you would all eat and drink me out of house and home lol...
