Take the top middle fin on the tail and gently pull to the left until it clicks and then to the right then pull backwards and the intestine will come out ..... however I don't do this when they are alive I stick a knife through their head first to kill them ......

I'm catching them from an inlet of the Thames so not the cleanest water in the world ... purging cleans them out of any crap and takes away the shitty river taste ...... Saves you cutting out the shit vein too. You can take the intestine out easily before cooking Can do, but if it's been purged long enough with nothing to eat, there's nothing in the shit vein. Have you seen what those things eat? Yep their diet is almost identical to yours lol ........

If your doing blackberry jam here's the crack mate ..... Weigh the blackberries and add the same amount of sugar, add the juice of a lemon (1 lemon per 2kg) Boil for at least 45 mins Make sure everything is spotlessly clean and sterilised, don't touch the inside of the jars as any bacteria will make the jam go mouldy.
