  1. Well after a 48 hour stint at work day off and the end result of a seven hour Beef ribs cook up,man I’ve just entered the world of fatness and am looking for space to pour some more Cider down my neck I wish I could stick a vid up the pics don’t do them justice….
  2. The final push for a 7 hour stint there’s only two of us I’m going to be eating Beef till the cows come home Haha get it ?
  3. 3 hours in I started with an hour and half on smoke mode and the remainder on 225f (110c) will give about another 3/4 hours with the last 2 wrapped ?
  4. Bit of prep for tomorrow I’m going to use the competition pellets haven’t used them before the amount of fat and sinew I trimmed must have weighed the best part of a pound.

  8. You might have seen this earlier in the thread custom made by a Yorkshire company Meat City Smokers reverse flow baffle plates and all that and you can put the chimney on either side my son had it made took about 4/6 weeks.

  11. £13 pound for those and their own stock is excellent value I bought some for £20 and they look nothing like that, there is a farm shop nearby me I’ve driven past a few times I’m going to have to stick my nose in I think.

I’ve never used it myself but the people I bought my smoker off of have a butchers corner on their site it looks good but a picture and reality can sometimes be worlds apart, I just buy from a decent local butcher and if I want something special I give plenty of notice. I did toy with an off set one of the big heavy duty American ones also looked at the Big Green Egg a friend in Cape Town has one and everything he shoots normally ends up on it it’s the big one lol. My Son had a custom built one made I think there’s a picture earlier in this thread it’s a great thing but I attended a cook he done and the best part of 12 hours he sat there feeding it wood sweating his nads off covered in soot, but the meat was amazing pork ribs and a neck of pork couldn’t fault it. Totally agree with what you’ve just said the meat isn’t cheap so why gamble on something that’s going to give you so much pleasure, I owned a ProQ the big one looked like R2D2 albeit a great bit of kit you had to literally baby sit it continuously because of the temperature fluctuations, I’ve got three 12hour shifts to smash this weekend then Beef Ribs for Monday’s predicted good weather?

  20. A little pan of water in the smoker will add a bit of moisture mate it’s a tough one to nail brisket look forward to seeing the after pics ?

I drove through this area last week I was staying in Masham and wanted to visit Pickering to visit the North Yorkshire Railway I went up Sutton Bank bloody steep or what lol but what an area to work and hunt in your a very lucky man Stav the heather was just starting to show as well which added to the nice drive through the moors.

  24. See this last week whilst having a wander in the woods up in Yorkshire my moneys on a sickener Russula emetica which is poisonous but not deadly just makes you vomit hence the name.
