FD they are Maris Piper Spuds I always use them. Rinse the chip to get some of the starch out of them.

Boiled the chips for 2 minutes put them in a colander to dry some. In a deep fat fryer get the oil tp 140c then lower the basket of chips in, cook till just start to go brown/golden on edges then lift out. Bring the oil up to 180c drop then in again should take less than 2 mins.

@Arry when you blanche it, you dip it several times in the boiling water. If you drop it in, the tentacles will curl up and no matter what you do after it'll be like rubber.
