I have made sausages with Thai birds eye chillies before and they were quite nice and not over hot. I do a few variants of ghost ,reaper, bhut chillies and i love eating them but not like that fec that! ...I'm off to a chillie and cider fest in a few weeks there will be loads of chilli eating contests there always fun to watch lol.
