    Great thread this lads, fair play to you for rearing your own food, i tend not to really eat much pork as a lot of times theres a dirty taste in the meat, if im doing ham hocks, i poach them for a couple of hours in aromatics that tends to rinse the meat out before doing a honey mustard glaze on them, the lambs and pork does look top class and id love to roast a side if lamp over a wood fire.
