Quite a few years ago, I used to sell rabbits to a fish monger,who used to sell game as well. I used to get pheasants off him that had been hanging in the market for at least two weeks, and they were green. But they were the best tasting pheasants ever, cold. They tasted disgusting warm, but once they cooled down they were absolutely gorgeous, and even nicer as they were free and supposed to be for ferret food.
