Rabbit Pie ! And, for the purists, made with shortcrust pastry, NOT puff pastry ! ? ! Cheers.

Treat off my dad tonight, he's a friend on the fresh fish stall up town... Scallops and lemon sole fillets...

Family get together at ours, so a bit of a spread.. 13 hour cooked brisket, slow cooked pork shoulder.. Home made coleslaw, stuffing, roasties... and a 2 day hangover! Lol

Not cooked it for a while but I did a beef Rendang today.

Garam masala, cinnamon, turmeric, black pepper & brown sugar for the spice base.

Then chicken stock, a tin of coconut milk, tamarind and lime juice (3 limes) in a jug.

Raisins and sultanas.

Fry off garlick, onion and ginger……add the spice base and allow to warm, add 2lb of cubed beef and fry.

When you think it’s about right add the liquid and fruit.

Transfer to a casserole dish with lid and allow to cook for 3 hours at about 150/180.

Water all evaporates off and the sauce is almost black when done.

some simple boiled rice…..sweet/sour/rich/citrus…..my favourite “curry”

For those who like heat, you can add chilli if you want.

Air fryers are over rated some are too small to cook if you got a family there are pain to clean up catch fire and some are don't last long I bet they get stained up and you have to clean up.or chuck them in a sink and scrape and scrub the mess out of them then the parts break off due to the heat and being heavy handed washing it out
