Out this morning mooching about just as it was getting light. Managed two decent runs then back home for half 8. On the way back we found a dead hare so I took it home. I cooked the loin for breakfast

Keep it simple, pan fry in loads of butter (more than you think sensible), plenty of salt and pepper. Brown surfaces then oven for ten to fifteen.

Second recipe.... And this one takes rabbit to a new level.....

Get a large sandwich bag or zip lock, into it put a generous dash of olive oil, a large squirt of garlic paste, two teaspoons of salt, one pepper, two corriander powder, two teaspoons of smoked paprika and some lemon juice. Mix this up inside the bag by rubbing it together a bit.

Add your hare quarters or if bag is big enough the whole rabbit. Rub marinade into meat and seal)tie bag with as little air inside as possible.

Place in fridge for a day or two.

When ready, grill meat. Have lots of melted butter ready and every five minutes baste the meat with it. With a whole rabbit I cut through the rib cage and lay it flat out. If you're cooking quarters do them in frying pan.

After eating, come back on here and thank me generously!

Just to add, obviously only use young tender rabbits for this.

You can adjust amounts and add different spices as you like, BUT do try marinading rabbit in a bag for a day before cooking - honestly, you'll never just feed them to the ferrets again!

Try a rabbit in the above marinade and leave it in it for 24hrs plus.

I kid you not, even my wife loves this one.

Kick bowl as far as possible then proceed 2 feed the dog summat decent

Have you ever had rabbit in spain? When I went to lanzarote I had it 3 times and it was amazing everytime.

Not tried it, just the smell puts me off, skinned and gutted to many over the years. 

Call it Coney stew or Estofade de Conejo still don't fancy it ?
