Prefer ribs, marinated in a hoi-sin based marinade for at least 24 hours, then braised in the liquid. Liquid is then reduced for a sauce.   Better than the ribs is thinly sliced belly pork marinated

Basically it is hoi-sin sauce which is diluted/flavoured with mirin (sweet cooking sake), soy sauce, sugar, salt, minced garlic, five spice powder. You can add other ingredients like finely chopped ch

Ribs all the way. I'd feed wings to the dog.

I seen a programme on this morning about John torode in Argentina looking at the beef industry, then they cooked a whole side of beef ribs over a wood fire, by feck my mouth was watering

 

A place I found up the coast from BCN ;)

Tonight; I have mussels in Tom yum soup with a wing/rib combo for seconds nom

 

sounds the ticket, the beef short ribs look tasty too,

Bottom dishes are both Tom Yum soup, The leaves in the soup in the second pic are some weird Chinese spinach type thing I picked up (really nice tasting tbh). I cooked the mussels separate and added them to the soup after.

 

Rib and wing combo (no pics) was made with homemade bbq sauce, honey, fresh chillies and garlic then cooked until pretty black and crispy :yes:
