Haven't followed a recipe here. Just done my own thing. Not a clue what it's going to be like.   First I fried up 2 rashers of streaky bacon, a red onion and plenty of garlic in a knob of butter and

Yeh it was tasty lads. I'm gonna do this same recipe with pheasant next week.

 

The fried bacon, garlic, onions and white wine made the dish. No doubt about that. Magnificent flavours.

 

Also I'm gonna try it with red wine instead of white.

How long was it in the oven for pal ? I got a rabbit the other night. Sick of rabbit stew fancy a change

Sorry mate only just seen this.

 

It had about 2 hours with the foil on and then 45 mins or so with the foil off. Long enough to crisp the bacon but not dry the meat out.

Good lord now I saw this, that looks gorgeous. I think I can smell it cooking from those pics. Id scran that down, nice one Gaz. Some great chefs on here mun, ive had some cracking recipes :yes:

That's what it's all about mate. Nothing beats feeding your family with your catch. And if you can make it taste a bit special then even better.

 

I will stick another one up next weekend...

 

Pheasant in apple cider sauce with orange reduction. Served with black pudding and creamy garlic mash.

 

Not done it yet but I know it will be fantastic.

I tried this a short while ago, fried onions, garlic bacon pieces then reduced some white vino with it.

Jointed up Bugs and a mate laid on a bed of baby potatoes. Put a pile of the onion, garlic bacon mix on the bunnies and what was left underneath with the spuds, onions and carrots.

Laid streaky bacon over the mix that was on the bunnies so the slices weren't directly on the meat.

 

It tasted feckin lovely and got the thumbs up from my uncle who has hunted and cooked rabbit many different ways for decades.

 

Gaz, how did it taste with the pheasant as I have a couple in the freezer?
