  1. If its a young bird, cut the breasts off and fillet them, they fry beautifully like steaks. You do have to get the sinew out or they will be super chewy. Sliced thin, the steaks go well in toasted panini with red pepper pesto and grated cheese. Bloody love the taste of Goose - so does the mrs

  3. I don't know - the last few times I've been out, most of the catch has been juveniles so not particularly big, but awfully tender!
  4. I love stews, curries, chillies but also coated with cajun spice egg and flour, deep fried KFC style. It's good honey roasted too, even done it like coronation chicken style (called it jubilee rabbit) which is good for using up rabbit fronts. I'm also going to try it a bit like pulled pork style - will keep you posted on the results

  6. I tried honey roast rabbit and it worked pretty well. A bit like a chickeny peking duck really. After washing and patting dry the rabbit, I scored the animal all over and rubbed sea salt and ground pepper into the surface. Then smothered it in honey, half an hour later I rubbed more honey in and did this another couple of times. Roasted in the oven for about 40 minutes at about 170c, the glaze worked a treat on the bunny - sweet, crispy and at the same time succulent. Very nice. Another time I'd probably add some herbs, maybe some cayenne pepper - but worth a go! Delicious with parsnips roas

Oddly enough, I've found it much easier to get permissions since I've had powder burners and shotguns - I guess a lot of farmers like it when you can deal with any pest issue. i found it an uphill struggle to get permissions when I was limited to air power only. My biggest permission has a farmer who wants me to muller foxes, lamp rabbits and shoot crows, magpies and pigeons in good numbers. Deer are also now on the list. Everyone has to start somewhere though and modern airguns are by no means pop guns (I've taken literally 1000's of bunnies with airguns) so keep bashing away at getting per
