Kitchen knife sharpening

I find it therapeutic, it's easy with a lansky set, and not worth extra effort of stones as will be abused by the family , I could probably do with a couple of new ones , I've always favoured Sabatier, what you guys using?

It's took me two hours to try and put an edge on a garbage cleaver my mother picked up from a charity shop, I've told her to look in antique place for a stained or rusty one lol, took ten mins to sharpen the rest with a quick rub on diamond....

I use one of these two or three pulls through and job done also got a nice kenn hom cleaver the other month doing a clearance job it’s a beut like a razor axe on roids lol

The pull throughs knacker the blade it's like running your thumbnail across a ribbon....

I use a blade tech sharpener as well . You wouldn't use one on a decent blade , because it does knacker them ,  but they're really quick and easy for the type of blades I use.

Two heavy swipes , then two soft swipes, and you have a blade that you could shave with.

I use an old blade tech, loosing its bite a bit now but still does a job

I think the metal makes a big difference and a run over the wet stone every few months smooths the blade out again the pull through just enhance any imperfections in the edge

Ive done ours and also some for my mum in the past on Japanese water stones up to 8000grit and finishing with a few different smoothness strops like I do with my own knives . I warned the Mrs and my mum to be careful because they were stupidly sharp and they both cut themselves when they were washing up and blamed me for making them too sharp so I just leave them to it now and don’t bother doing it anymore
