Ken's Deputy 4,463
I'm pretty sure it was Neil who put me onto Rendang? It's an Indonesian type of curry and just Looks out of this world! However, try as I might, I just can't break through this solid wall of impossible ingredients. I grabbed a tin of coconut milk, just by reflex, the other day. But, Lemon Grass??? Even then, the proceedure looked a bit daunting. God loves a tryer though. Today, I happened upon what I reckoned could be the answer to my prayers! Instantpot Rendang Using a packet!!! I thought I was heading straight to heaven! Sounds an absolutely fantastic little chick too. So fukking happy in herself. Chattering away about her fukking Rendang. Her Instapot. Subscribe. FFS!!!!!

Ken's Deputy 4,463
Yeah. I have the impression Rendang's not your every day curry Some fukking weird ingredients that I know shit about. But, some people make it rather dry and that makes the meat look absolutely unbelievable! It's just the frustration getting to me. Every which way I turn, I seem to hit Another brick wall. It's always One more fukking ingredient. One more utensil. I've had this load of beef chunks in my freezer for Weeks now!

Ken's Deputy 4,463
Buggered if I know, now. But, no fukker can ever call me a quitter! I found This girl, today. I've watched it all the way through and I genuinely reckon she's about as understandable and followable as I've found so far. Granted, some of the ingredients still sound like next to impossible for Me to source. But, I'd say this is probably my best hope yet:

Ken's Deputy 4,463
That's undoubtedly true, GL. Only fukker is; I've had this sack of beef chunks in my freezer for going on a month now. And, all this time I've been trying to pin down a simple way of doing something with it. Al's great. But, 1. He's obsessed with chicken. And 2. He cooks for one. Really, I'm looking for a decent, beef curry I can do in my Instantpot. I have chipati's in the freezer. Big bag on onions, waiting to become Bhajis. I have all the gear for those and have made them before. Find the right recipe for 'four people' and I'll be sorted. That rendang's just kept me so busy, because it Looks great. Fascinates me. And has constantly seemed just out of reach. Now though, I'm happpy to put that aside and shall probably pursue a BIR / Base Gravy based beefer for four and smash That in the epc.

Mate, f**k the rendang off for the time being, and concentrate on the beef madras you wanted to do. I'm assuming you now have all the ingredients to do that, so crack on with that. Leave other curry dishes etc, til your comfortable doing the ones that are more manageable for now.
smithie 2,444
Just find a recipe for 1 and times the Ingredients by 4 If the beefs frozen will it be ok to cook and re freeze? If not you need to make 1 portion at a time anyway
Ken's Deputy 4,463
You're right, Shaaark. In fact, I was just thinking how I'll have a handful of chickpeas left over, when I make tomorrows 'Beef Madras' I'll dig out my curry thread, presently. I'll put my plans on there. Meat and base gravy blocks are in the sink, defrosting as I type! Let's let this one sink into obscurity now then.
