Seeing quite a few of what I believe are Ceps, what’s the best way to cook them?

Have o look at the link on the 5th post down covers Ceps. The second picture down is a Cep, Brown cap. white sponge pores underside of the cap that do not bruise, bulbous stalk, and if its cut is white no staining. One other thing there is a similar one called the"Bitter Boletus" its not poisonous but it is bitter as fxck and will ruin any thing you put it in, when I cut a Cep I give it a little lick to test. With Boletes a safe rule of thumb is if there is any red on it any where stalk as well or when you cut it goes blue then leave it. But please get a book and do not eat any thing you are not sure of.

Out for a forage to day, the first Cep of the year and a few more Boletes some Field Mushrooms, a few Chanterelles. A Blackening Polypore (not that good to eat). First Cep   Black

Arry in his early days, picked the wrong mushroom

They look great ?.. I always bail out of eating wild ones in case I'm wrong and they're poisonous ? ... This year I've got braver I try them twenty mins after the Mrs does ?

Nice fresh one that, haven't seen one of them in years now. Your right about needing some rain, lots of young stuff coming but starting to dry out. Been finding Bolete's but not sure what they are. Think they are called "Iodene Boletus" cut white no red, no staining and no bloody good Lol.

Out today some where different for me but got some fairly good stuff. "Oyster Mushrooms"( they were growing on a beech tree) , "Hedgehog Mushrooms', "Ceps" "Bay Boletes".

"Ceps" the one that are white underneath and a bulbous stalk. "Bay Boletes" with the yellow/olive underneath. Both do not have gills but have what looks like sponge.

"Hedgehog Mushrooms"  Do not have gills instead they have spikes that can be knocked of.

"Oyster Mushrooms" I would say shaped like a clam shell, usually growing on a live or dead Beech Tree

This is "Hen of the Woods" growing out of the roots of a fallen Oak tree, is a good one keep your eye peeled for one. Usually growing at the base of an Oak or near the base of an Oak.
