My understanding is that a bullet will cause a huge amount of trauma to the brain and nervous system resulting in instant death. A bolt gun only destroys the part responsible with consciousness, the part responsible for involuntary actions like the heart beating remain functional.

 

For the animal being killed, I think the two are exactly the same.

A captive bolt is a humane stunner. Bleeding or pithing is required to kill the animal. It is possible for an animal to regain consciousness following a captive bolt if bleeding or pithing is not carried out, hence anecdotes of 'dead' animals jumping out of the lorries during the foot and mouth culling...

Yeah, although in that instance it was a compressed air powered version, rather than the ones in the UK, which in the main are powered by .22 rimfire blanks...

 

There is an interesting article on the internet from Germany about survival rates of people who have attempted to commit suicide using a captive bolt. Some attempts resulted in instant death, but others survived several days or even weeks...

thing on the local news earlier. trading standards had found 40% of the meat products tested contained meat products other than those displayed on the label so its any ones guess as to what's in the packet never mind believing how the label says it was killed
