For the record, half lard and half butter makes a great short pastry. Main problems are caused by making the pastry too wet: turns out like tough cardboard. Quote Link to post Share on other sites

They're about 6 inches deep. I supplied most of the birds that went in it and was expecting a bit more than a couple of slices but the family decimated the bloody thing last Christmas and there was nothing left. northern lad 2,292 Posted October 6, 2013 Report Share Posted October 6, 2013 I made 2 on Thursday scot,,,, one with chicken bacon,cream,,,and tarragon ,,, and the other a simple mince and onion,,here's a pic of some rabbit ones I made,,,, got a nice roe deer neck in the freezer,, for a pie best bit for pie and stew I recon,, the neck. TOMO 29,254 Posted October 6, 2013 Report Share Posted October 6, 2013 Blind bake means baking the bottom of the pastry in the pie dish ,,,you put the pastry in,, then put grease proof paper on top,,, then some dried beans,, I think you can youse rice,,, or you can buy special beads made from pottery,, these weight the pastry down in the pie dish,, otherwise it puffs up like a poperdom.. But to be honest I never blind bake the bottom,, just get the pastry in ,, then the filling,, then get the pastry lid on,,, egg wash it,, and bake for about 45 mins 1 Quote Link to post Share on other sites

I fuucked up! :laugh: I've made a kick as pie filling, beautiful pastry, 1 problem.....
