I hear its supposed to be a nice meat, One of the permissions i have is full of them, and i have recently been asked to get rid of them, so far i have fed them to the ferrets, but if they are worth the effort, I'll prep them and make a meal. The Duncan 802 Posted February 14, 2013 Report Share Posted February 14, 2013 The squirrel holds on to its coat tighter than a bunny and the meat is exquisite, especially the hinds in breadcrumbs and cajun spice, deep fried. Cajun Squirrel Hinds: score the hinds, coat in beaten egg and then flour with cajun spice mixed in. Fry in very hot oil for a couple of mins to get the coating crispy then 15-20 mins in medium oven to finish cooking. Tastes like KFC, only a thousand times better! V Good dipped in garlic mayonnaise. Or more simply: season with salt n pepper and a bit of finely chopped garlic and fry until just cooked and tender in butter/sunflower oil 3 Quote Link to post Share on other sites
