  6. Mariade them for an hour or more, then pan fry in butter for 10 mins a side. Serve with mash or dauphinoise potatoes and buttered green beans. For the marinade I'd use garlic, chilli and ginger finely chopped with a bit of white wine vinegar and a dash of toasted sesame seed oil if you have it.

  10. Put them in an air tight bag and do your best to remove any air before you seal the bag. Freezer burn happens when the meat is allowed to oxidise.

  13. Talking of traceability, I saw on the news tonight that the most of the meat in question had come from romania then to france, then gone to the netherlands, then luxembourg and finally to the UK. Talk about well-travelled food! This kind of thing should be on labels too.

  16. Just braise it for a couple of hours and it should just fall off the bones. I'd recommend browning off the meat first which caramelises it slightly and helps it hold together a bit. Add some seasoning to the water too - salt, pepper and a dash of white wine or cider vinegar.
  17. Good service! Another thing that gets on my tits is walking in the country and coming across fag ends, macdonalds wrappers, cans etc etc etc. These people need stringing up!
  18. agreed! better to leave it for nature to break down (if its not in a park etc) rather than enshrine it in plastic and preserve it for decades! Theres a bush in my parents village that is positively festooned in multi-colour poop bags, like a really nasty xmas tree.
  19. I'm busting to try a bit of horse now! No-one seems to sell it though I did trying asking a manager of tesco where they kept the horse meat burgers, but he didn't seem amused
