Kannys offerings do look extremely tasty, I like the ceramic but if I go over to a metal one I'll probably make something or have one made. I've not looked at the pellet smokers I'll have a Google....

I like coals, and don't normally do a 14hr cook over night, if I want the easy life I smoke chicken or pork etc then it's lid down and forget it but tbh I prefer it bbqd more heat and more marinade dipping. The brisket is something I wanted to try , but only repeating as kids love it, that lump on there now was £40 so bit dear for me to do regularly.

Not sure how long I'll stay up for but.....
  6. Do unto others and all that, I'd like to think you feckers would put your hand in your pocket if I passed, it's a deed that needs to be done . They're wonderful children because of John and Rachel and themselves .
  7. We normalise all food, get a pig from allotment, got to say even I've even shite I wouldn't normally just so they don't have any impact on there diet, tables around us praised their lack of inhibition when it came to devouring shellfish, a proud moment for me if I'm honest along with nursery/school cementing on third helpings ??
  8. Took my boys to a local pond , it was hard work having never really fished with a whip, two kids to watch/coach/and entertain. But it was successful and the youngest lost a tearaway carp early on so we fished the margin tight, catching bleak, gudgeon, bream, perch, roach and Rudd. Ending the day with a carp I hoped wouldsnap us off but standing ten foot back from the bank being strongly encouraged to land it by the kids .....a good day, off again tomorrow.
  9. Haha, yep indeed , but nice to clear history and pictures . Give me a bell when you want to head down , I'll shout you next time I head to the green grass....
  10. Looks banging that bosun , I use a honey, English mustard, with a sprinkle of ground cloves, does the family for a few weeks for ham. Most money efficient cooking I've done ?
  11. Had a nice lunch out with friends and family the other day, coastal pub ....

I used water on the first , but truth be told it's time that breaks the meat down , as well as keeping the temperature down which takes a while for me as these charcoal smokers need time to settle, then You've got the temp plateau and folk who spray stuff but in all honesty in my limited experience it's time and temp.

Looks tasty that kanny , nice and quick, bit of basting , love a spatch cock
  14. I got a small dog that'll shit five times at the beginning of a walk, preferably in spikey bushes, piss on people or anything for that matter , he also performs fellatio on himself which is vile or maybe I'm envious. Got a bitch here that's an angel except with other dogs and has gotten decidedly worse over the last year , lack of socialisation on my part but a bit of hereditary issue and her muzzle arrived today as it'll allow her more freedom and reduce my blood pressure....had shit rollers and shit eaters , and shit dogs but the dog violence does my swede in a bit. I'd say most of it is due

Hi all, I'm using a Louisiana grill, same as a kamado smoker. Doing my third brisket tonight, first was underdone and tough second was a great success but used a friend's rub which was a bit too peppery for myself. Going on at 19:00 got some whisky barrel shavings to add flavour, will wrap in paper just after midnight all being well. Hoping it'll be spot on for a brunch tomorrow. A few pictures of prep and finished article will follow.
