I have had good and bad historically, but always levels of good these days, because I select the best, from the best grazing/feeding areas if I'm after one for the table. Also attempt to check age and sex when after food for the table. As with many animals, a young female that has had a good diet will almost always be sweet, tender and tasty. ...and I don't remember the last time I plucked and cooked a whole one, simply open the chest and remove that breast meat.
