Cooking Goose

Is it best to hang a goose before cooking or cook from fresh.

I always cook them after a day or two but it depends on the species. I was told farm geese no worries and cook it neck down on a bed of root veggies and keep the oil for the roasties and yorkshire pudding

Ah then I'll reiterate what I was told about this species! Put a house brick inside the bird, cook it in the oven. When cooked take out the brick, throw the bird and eat the brick

Put a peg on your nose and send the wife out for the day when you cook it.. I tried cooking one once and the stench nearly cost me my marriage!

take the breasts off ,the rest of it not worth a sh,it, wrap the breasts in fatty bacon and cook slow ,spot on
