Cooking Meat Underground?

I want to give cooking in a fire pit a go. I've got a kilo of lamb on the bone I got for next to nothing, so thought I'd experiment first with that.

I've googled the basics, but wondered if anyone had done much of it & could give me a few pointers.....

One question, I hope not too stupid, but for the rocks, would granite cobbles be ok? I can get them...haha

Done it with fish,dug a hole,raked the hot rocks out of the fire and dropped them in,the fire was coconut charcoal fuelled,put a layer of banana leaves,used foil for the fish but I know that was cheating,another layer of banana leaf then covered with sand and left for a couple of hours.

New Zealand hăngi style :thumbs: I remember seeing some bloke possibly Ray mears? Add hay to the pit also for extra flavour. ...get some pics up when you do it will be intresting to see how it turns out

i rember something about covering it with wet newspaper , but im thinking it would dry out and catch fire eventually

i think with the pit, it's sealed and there wouldn't be any oxygen for it to actually burn? Your cooking on residual heat I think, hence the rocks.

I've read wet hessian, cloth etc.........If I've understood right, that go's straight over the meat?(which is wrapped), then backfill over that... Edited by Accip74

I googled that last night, I'd never seen it done on a large scale like that before. Quite impressive :-)
