I've got a kilo of lamb on the bone I got for next to nothing, so thought I'd experiment first with that. I've googled the basics, but wondered if anyone had done much of it & could give me a few pointers..... One question, I hope not too stupid, but for the rocks, would granite cobbles be ok? mackem 29,522 Posted March 30, 2017 Report Share Posted March 30, 2017 Done it with fish,dug a hole,raked the hot rocks out of the fire and dropped them in,the fire was coconut charcoal fuelled,put a layer of banana leaves,used foil for the fish but I know that was cheating,another layer of banana leaf then covered with sand and left for a couple of hours. Your cooking on residual heat I think, hence the rocks.I've read wet hessian, cloth etc.........If I've understood right, that go's straight over the meat?(which is wrapped), then backfill over that...
