TOMO 29,285 Posted January 14, 2012 Report Share Posted January 14, 2012 depends on the cut of meat you take off,,, some parts want a long slow roast,, others 2 mins either side in a hot frying pan,,, same as beef in a lot of respects,,,, the fillets , and loin from either side of the spine want all the silver flat sinew off ,, then hot oil in a pan and like i said two mins either side, then rest for 5 mins Quote Link to post Share on other sites
