As has been said its best just roasted like you would any other joint of meat. Make sure you put some fat on it though, and baste very frequently to stop it drying out. Give it 15 mins per lb if its a big joint and 20 mins per lb if its smaller, plus an extra 15. Gas mark 5 (190C). Any veg will go with it. It makes a good Sunday roast with yorkshire puds. We'll be having one on Easter Sunday with the family :)

 

If you think it might be tough (old) you could marinade in red wine the night before you roast it.

Im not a fond lover of roast anything ..its just too dry and chewy for me .....what I do with a leg of venison is this :I cut it up into large chunks add a chopped onion then add either red wine/1xtin guinness/1xtin sweetheart stout,two beef stock cubes and some herbs and seasoning of your choice cook all day in the slow cooker thicken the gravy with cornflower pour into a pie dish and top off with puff pastry pop in the oven to let the pastry cook and rise(about 30/45 mins)......... then get some quick cause it does not last long in my house...lol
