Hello all,

 

I go through a fair bit of game and venison, but when it comes to butchering a venison carcass I feel im not doing it justice. Im great up to the point of butchery, but then... out comes the hacksaw, and...... oh well, at least it dosent get wasted :doh:

Need some help to become a better butcher, and how to get the right cuts etc..

 

Are there any videos or short courses for this? Any help will be very much appreciated.

I just treat them like a big rabbit and joint them bag them and label them and thought i was doing a great job till a retired butcher did a couple for a haunch and there's a world of differnce
