For my motor for similar needs I went with a fixed hitch and single 7-pin electrics on a bypass relay. My 1995 Peugeot 306 sedan, the light wires were all the same colour, so it took a while with the multimeter. Sometimes you can get a kit that just plugs into a connector on the loom. Mine was an official Peugeot kit and you still had to splice in. Fitting the bar was really easy though. All the holes lined up. I swapped that car for a 1998 Vauxhall Frontera. That was much easier in all respects (shame the car was a lemon). The bar went straight on and adding the wiring was really easy. I think the bar was about £40 then maybe £15 for the wiring. Go for a known brand and it should be easy enough if you are used to DIY. There are loads of websites and YouTube videos providing help. The hardest part is starting.
