Dusted The Air Rifle Off...

My missus had never even heard of eating rabbit, venison, pigeon, pheasant or hare before she got with me.

She thought chicken came in packs from tesco. Lol.

She eats the lot now as long as I cook it. She loves rabbit and pheasant roasted whole in red wine and I think her favourite is my rabbit and Stilton pie.

Fire that recipe over gaz wouldn't mind giving that ago mate :thumbs:

They are on cookery section mate. Will dig them out for you. Which one you interested in? Rabbit and Stilton pie?

What ever you have lol yeah that will do for a start mate as the other half don't like the look of rabbit stew so in a pie might change her mind :thumbs:

Right so we had a decent day ferreting yesterday, most have gone off to the game dealers and other lads had a few but I brought myself half a dozen for the table. Had a few recipes in mind and still want to do rabbit lasagne.

 

However first up is Rabbit pie...

 

I washed 2 x jointed rabbits in salt water. Left them salted for a few hours before rinsing off and rubbing the meat with a chicken oxo cube...

I placed a selection of mixed veg into bottom of slow cooker - diced carrots, chopped celery, diced white onion, diced parsnip, diced potato, lots of garlic. Added a pint of chicken stock, a pint of cider and topped with a layer of parsley.

 

Then I plaxced the rabbit on top of the veg and parsley.

 

Next in a hot pan, I melted some butter, added a red onion finely chopped, 4-6 chopped cloves of garlic and a packet of smoked bacon chopped into small pieces. I fried this until golden brown and then added to the rabbit in the slow cooker...

I cooked the whole lot on low for 12 hours (overnight).

 

This is the meat this morning...

Removed from the bone...

I spooned the remainder of the slow cooker into a large pie dish, minus the liquid and mashed with butter...

Then I added the rabbit meat and crumbled Stilton cheese over the top...

I took the liquid from the slow cooker, put it into a small pan and thickened with gentle heat and cornflour...

My littleun liked it that much I've made her a little bowl of the rabbit meat, veg and gravy. She won't be here for the pie later as she's going her mums...

Then I added the thickened "gravy" to the pie dish to cover the veg and rabbit meat before topping with puff pastry and whacking in the oven for 45 minutes.

 

Voila...

F'me. It's like a Delia Smith cook book with those images...

 

What's the rifle like then? Any images of that :)

Shes an old nail mate. Pics of food is better. Haha.

 

This is her, got her for my 18th birthday off my dad nearly 10 years ago...
