Size can come from the greyhound as well as the deerhound, I'm running a 30" 1/4 deerhound / 3/4 greyhound bitch which was out of a 28" first cross bitch sired by a 31" coursing greyhound dog. Pure bred deerhound aren't nippy over a short distance but they are also not by any means slow, what they can lack is nippiness and agility although almost any of them will seriously outpace the cloddy bull cross types whose pictures are always being posted up on this site attracting the inevitable "nice strong dog that mate" comments!
