I would reccomend a Chateuneuf Du Pape. Very complex peppery flavour, just works a treat. Can be quite alcoholic as well, ie 13.5%. So can act as a mood enhancer . Not trying to be clever but wine is opened prior to serving to allow it t breathe ,and there is a misconception about reds and room temperature ,thats' a little outdated now due to central heating. I wouldnt have an open bottle on a dining room table for three hours the wine could go a little flabby,I would keep it in a cool room or cupboard ,till about a half hour before it is needed. A Burgundy would go well with venison .it allways has for me at any rate. Quote Link to post Share on other sites
