Rough tussocky grass and moors and hills: a good tough Collie type lurcher. Its horses for courses, and a Whippety type would soon come unstuck on rough hilly ground, and a slower dog would struggle on big arable fields: OK, there's always exceptions, but do the ground work, think about the conditions you'll need to run the dog in, and talk to as many people as possible for their opinions: try and see some different dogs running as well.
