Nik_B 3,791
We had a hot smoker on the rig site in Algeria but it was made out of 36" and 24" casing and you would need a crane or forklift to move it so not really practical in the real world, We could cook 6 chickens at a time on it It looked like a traction engine without the wheels, the main body was horizontal and inside you would put the coal which would heat pans of water which had flavored wood chips floating in them, it then had a vertical pipe like a chimney where the chickens would be put. ZacB 147
We only cold smoke. Old fridge plus ProQ smoker. Works a treat and not too pricey www.macsbbq.com
Nik_B 3,791
Keepitcovert check out the diagram on this page from ZacB's link. It has an exploded diagram. I recon that has everything you need to build your own one. http://www.macsbbq.com/hot-smokers/product/proq-excel-20-bbq-smoker
