I dont know what bull crosses you had but I've seen a few bull crosses run lately and they certainly are special. They have got something inside them, a grit and determination. I will definitely have bull blood in the future. Any dog can have grit and determination. They're not special to me anymore as they are too heavy for what I want. As for what bulls I've had I had a cracking little rescue bitch half x and her son from a 5/8 3/8 jabba, have also had from Reece's billy. They are good dogs for the right job but I now prefer my racy stuff. When I had bull in my dogs I had plenty, that's why I used Billy lines. Now I don't go for quarry that needs a good bit of bull so am happy with collie. As I say only an opinion. Cracking dogs. But as you say top end and stamina are an issue due to size, I personally would now rather have collie lol. My dog was badly treated for the first year (before I got her), and TBH I didn't do the work with her that I should. Her recall is useless, and if she sees a fox - that's it! Worrying when she's not properly stockbroken. Lovely housedog, but at seven I don't think there's much I can do with her (unless someone on here knows different?). The contrast between her and my deerhound X pup is amazing. He's laid-back, comes in to the whistle from 100 yards+ most times, will stand at my side when told to, and has been hard-mouthed (when catching squirrels in the Park) and is now soft-mouthed with rabbits.
