Just walked out my back door 2 rabbits sitting out in the maize field so got the 17 hmr 1 shot hit him stone dead. head shot 110 yards on range finder sent the springer out to fetch it just skinned it wifes cooking it up. love rabbit :thumbs:

My missus hates it............. Which is a shame as I like it. Still more for me.

Ingredients.

2 small onions.

4 rashers of bacon.

The meat from 1 rabbit.

4 slices of bread, processed into breadcrumbs.

1 teaspoon mixed herbs.

1 tbsp worcester sauce.

1 egg.

 

Method.

Finely chop the rabbit, the onion and the bacon. Add all the ingredients together and mix well.

Then just make them into burger shapes and cook like a regular burger

You can decide the size of the burgers but this recipe will make approx 10-12 small burgers.

If you prefer a spicier burger, add a teaspoon of chillie powder.

When I cook rabbit for stew or pie I cook it twice. I joint it then soak it then cook it in the oven. Then when cool I flake the meat off the bones and then make it into a pie with the other ingredients.

 

Do you cook the rabbit meat once or twice as once cooking leaves it tough and chewy?

only cook once mate the bacon fat helps to keep burgers nice and juicy
