Tapping birch sap

Hey guys n' gals,

 

Just wondering is anyone knows the best time of year to tap birch trees? I thought it was around March time but some of the trees have already started budding down here .

Early spring I think, but your right its an odd season, the hazels here have buds already, though the birch seem ok so far.

LocalYokel... usually it's best to tap birch during the 2nd - 4th weeks of March. Thats when the sap usually starts rising. But like you 've both said, it's an odd season!

My wife was born in Siberia mate and the tapping of birch sap is a normal occurance there. The best time to tap it is just as the leaves on the birch tree are starting to appear, this is usually within a couple of weeks of each other from year to year. Early Spring. It makes an excellant drink when put in the fridge as a thirst buster after sport etc.
