well done tony! congrats on your first pigeon. i like to pan fry them with a little olive oil for a couple of minutes so there still pink and bloody in the middle then serve them with salad. you dont want to add to many things to pigeon as you'll want to keep the wonderfull taste of the pigoen.

I don't like meat cooked less than medium though, no blood in the middle for me Aaron
