I have recently watched a couple of deer processing DVD's by a chap named dave stretton which I found very informative.

 

Could anyone here recommend me any other butchery/processing DVD's on the market at present that are worth a look. I am particularly interested in deer and lamb/mutton.

 

Also on this subject are there any reference books available with detailed photographs and descriptions of meat cuts.

 

I appreciate any recommendations.
