does anyone know a quick and easy way to make billtong

I used to enjoy a nice bit of Kudu biltong, very nice with a couple of frosty Castle beers, ((( I think first you have to be in a nice dry climate, to be successful, with it, even up in Canada, they call it jerky, in good dry weather, they make it from the buffalo

Best place to get spices is a Chinese supermarket or Asia store. You'll probably need quite an amount and bags of spices are a Lot cheaper there than in a supermarket.

Try here for a few recipes Biltong recipes on recipezaar

But basically black pepper, coriander, rocksalt, chillies etc are a good start.

I'm off to bed but will try to dig out a few more links for you tomorrow.
