The only time you will get a bitter pheasant is if it's been in the freezer too long, the fat can go rancid and spoil the meat. Generaly speaking pheasant is a very tastie meat with a mild game taste. Don't hang it too long.. Quote Link to post Share on other sites

MikeTheDog 153 Posted March 14, 2009 Report Share Posted March 14, 2009 I've only had one bird go nasty on me stig, pheasant that is! ...I think it must have been around from the previous year so get eating.. ...I did ask my local butcher how long game birds would last in the freezer, I think he said about three months.
