hughesey1552 0 Posted October 31, 2008 Report Share Posted October 31, 2008 ibe just this minute finished eating my tea.... which was my first rabbit. once it had been gutted, i sliced the breast meat and fried in a pan with, garlic, black pepper, mushrooms and chopped chillies. it was deliceous mate. just wait until the meat is nicely browned (thats how i like it anyway!). A good stew is a simple starting-point ,virtually fool-proof,chuck in any sort of veg ,can of baked beans,rice ,curry powder ,chilli ,anything you fancy. In the oven or on the hob for at least 3 hours ,don't let it boil dry of course . I usually brown mine in hot fat first but with rabbit the culinary world is your your oyster. Fat-Ferret 857 Posted November 4, 2008 Report Share Posted November 4, 2008 I made this recipe last week, 2 rabbits, It done me 3 days and got nicer the longer it sat in the pot..... 2 rabbits - Jointed Cover with water in a large pot with peppercorns, onion, celery, bouqet garnet etc, etc - Whatever you have kicking about Simmer for 2 hours Remove & Let the rabbit joints cool Strip meat from bones & leave to one side Get another large sauce pan Chop 1 Large onion 2 cloves of garlic Cook till browned with olive oil Add tomato puree, glass red wine, tablespoon of sugar, stir slightly Add 3/4 cans of chopped tomatoes & a bunch of oregano Add can of chick peas / black stoned olives / some olive oil (All optional) Simmer for 20/30 mins Add rabbit meat & season Add basil (Optional) Serve with pasta, rice or potatoes DONE!
