I have a buddy in Texas who sent me some whitetail deer jerky and I just rec'd it to-day. OMG, it was simply delicious. I sent him a message asking for the recipie and if I get a reply (it may be a family secret) I will let ya know. This was by far the best jerky I ever tasted. The meat was sliced perfect with no fat on it and it was vacuum packed so I am guessing he has the process down pat on how to make it. Quote Link to post Share on other sites

spartan_ferret 6 Posted January 17, 2012 Author Report Share Posted January 17, 2012 im no expert and have only really started making it but i do it like this....... I cut the meat sidways (if that makes sense to you ) and roll it out whilest im cutting it so it becomes thinner and then cut it in to strips. I then put it in a bowl with some sea salt to draw out the moisture and leave it for an hour or two. I then add a little garlic powder and paprika then rub ( and maybe another little bit of salt depending) i then mix, rub and turn it all over in the bowl with my hand. Then I put it on a rack in the oven on temperature 70 dergrees celsius and then wait for it to dry out, sometimes it takes awhile sometimes it dont just keep an eye on it and take it out when its done. And thats how I do it and it taste goods and people who I have given it to like it. But if you look it up on the internet it will explain other ways to do it. I just spoke to my buddy in Texas and there is a seasoning you can buy which is what he used on the deer meat jerky he sent me as follows.....http://www.nesco.com/category_12e291b19e72/subcategory_dca70fcaaee2/product_4e90170dab99/session_08eadd232e93/ This jerky is by far the best I have ever eaten. The meat was cut in 1/8" thickness and about 6" strips. Apparently the instructions come with the seasoning on the proper preparation and how to cook it.
