knife sharpeners

Rew, Opinel knives are very easy to sharpen, any good stone will get a very keen edge on them. The steel is like what you'd find on old carving knives, that you could sharpen on the front door step!

 

They don't keep an edge like a knife with harder steel/stainless steel, but you can get them nice and sharp again with little effort.

 

Mind the angle, if you hone it with too shallow an angle, you'll "gap" the edge when you hit anything hard like bone or whatnot.

I've carried Opinel's for over thirty five years (as I always point out; The knife must be good, if I've stuck with them That long, right?)

 

I've sharpened them with Steels, Oil Stones, Carborumdom Stones. Sharpened the one on my belt now just the other week. Used the same damn great Carborundom Stone I now use for my hatchet. Huge, heavy, rough thing with a wooden handle. Good as gold! :)

 

The steel used in these babys is high in Carbon. Purely personal preferance, but give me Carbon Steel over that Stainless shit any day of the week :good:

Me to, nr4 and nr8. Always had good expierience with those knifes. My dad's sandstone is now here in the garage, he used it for sharpen his chisels, its slow turning and wet, and if you finish the sharpening on a oil stone after it, veeeery sharp ;)

i have a No7 opinel and it is becoming blunt.what sharpener would you reccomend.

dont use any fancy thing i had a bladetech it wears the blade down too much i found. what you need is a good oil stone and steel or leather belt. if you learn to sharpen a blade properly a steel and stone is all you ever need.

:blink: Why on earth have they brought out a Stainless Opinel??? Smacks of inventing a square f*ckin wheel!!!

i,ve had this conversation with a butcher friend of mine. he swears by stainless blades and has a stainless opinel. i use the carbon one. i guess its what your used to working with.

Also I suppose, thinking about it; Carbon does tend to get a bit mottled, doesn't it? Can't have a Butcher using tarnished / 'dirty' knives. Fair play :good:

 

(Still wouldn't personally have one if it was given to me though. Probably because I'm just f*cking useless at sharpening knives and carbon makes it easier for me ;))
