Yep you can drink it sooner but the blend would'nt be as good, more like drinking straight gin with a few berries in, end of January should be ok if you wanted it for beaters day, best to save the other two for next year (you'll taste the difference) Quote Link to post Share on other sites

Usually leave them in the jar brewing for about 8 weeks then strain & bottle. You can drink it straight away but the longer you leave it the better it tastes.If you want you can de-stone the gin soaked damsons & stir them into melted chocolate to make you own boozy choc bars Quote Link to post Share on other sites

I had some at one year which was nice, but two is an amazing difference... it seems to loose its cough medicine likeness and gains a port like finish.
