Roast Cajun Cotton Tail, in Creole Sauce

Anyone who knows me, knows I like Cajun & Spicy food ;)

 

 

Put a Bunny in the roasting dish today, very light coating of oil, covered liberally in Cajun Spices and left to roast for an hour and a half.

 

When cooked I placed a couple of jars of "Creole" sauce in the roasting dish.

Cooked for a further hour on medium heat in the oven.

Part boiled some new potatoes, then chopped some large mushrooms, placed with the potatoes and finished and finished off in the oven

 

Here's the finished product.

Tasted Superb :D
