badger ham recipe?

does anyone know of a recipe 4 this as local keeper has asked me 2 post this request as he has an ol' boy who beats 4 him who says that it is good stuff :sick: :sick:

Badger Ham?
In times of old, that is before the common use of refrigerators, people did all manner of things to preserve meat of many kinds. One of the foods they used to preserve were badger hams - these were the smoked and salted hind quarters from a badger. Back in those days, I guess you ate food for survival rather than the taste. :sick:
Just to keep everyone within the law, preparing, keeping or eating a badger ham would be a criminal offence today! :whistle:

APPARENTLY,BADGER IS BEST EATEN COLD AND SLICED OFF THE BONE JUST LIKE HAM.ROAD KILLS THAT HAVE BEEN ON THE ROAD FOR 2 WEEKS IN JULY ARE BEST DRIVEN PAST HOWEVER.

my grandfather once caught 1 in a snare many moons ago and was determind not to waste it so he fed some to his ferrets who wouldnt eat it, and boiled the rest to feed to his dogs who also woulnt eat it so i dont think i'd try it either :no:

I'm getting closer this is for a shoulder I guess you could use a ham since it's a piece off the shoulder anyways.

Hi there, yes I've tried Badger a couple of times. There's quite a bit of fat around the hindquarters, and I try to keep this on the roast. I'm not much of a cook, or a butcher for that matter, so I simply remove the hind leg at the hip joint. I discard the lower part of the leg, and put the joint the oven at 180 C. (Wrapped in tinfoil and some cooking oil poured in). I can't remember how long I cooked it - it's written down somewhere!
I'd heard it said that it tastes like pork, but IMHO, closer to lamb. Having said that, I was comparing it with supermarket pork - recently I tasted pork from a wild pig, and it was much more flavoured. Maybe badger tastes more like wild pork - I don't know, I'll have to try it again!

At this time of year, Badgers get killed frequently on the roads - try one that's fresh and not too cut up.

I did try my ferrets with it, and they didn't like it - but maybe they're pampered too much.

This i a traditional recipe from the north east of england and to me is the only way to cook badger
1 Remove skin from meat and put into a large saucepan
2 add 1 half bottle of vodka and 2 bottles of newky brown
3 pour in 1 cupfull of fresh orange juice and half a bottle of good brandy(stirring all the time)
4 heat for about 45 minutes and then add a full bottle of dark navy rum
5 when mixture is just about to boil open your dustbin and throw in the badger meat cos it tastes crap and drink the gravy!!!!!!!!!! BEAUTIFULL
